Sunday Brunch 2025: The Table
This is the season for a brunch, shared with your favorite people. On Easter or just any beautiful day (Recipe# 64).

Set-Up for the Sunday Brunch 2025
Based on 5-6 guests you will need:
- 1 recipe of ‘Cousin Herb’ (herbal butter)
- 2 recipes of ‘Souffle Claytonia’, replace the claytonia with arugula
- 1 – 2 recipes of ‘Phantom Bearlings’ (with the Ingredient Special on Bear’s Garlic/ramps ‘Who’s Seen the Bear’)
- 2 recipes of ‘Clock in A-Flat’
- 1 recipe of ‘Winter Transition Salad’ (‘Sunday Brunch 2025: Salad’, see recipes below)
- 2 recipes of ‘Sunday Buns’ (‘Sunday Brunch 2025: Buns’, see recipes below)
- 1 recipe of ‘Coco Oat Basic Yog Cream’ (‘Sunday Brunch 2025: Dessert’, see recipes below)
- 1 or 2 jars of ‘California Jam’ (I made mine fresh in January with pears from storage and fresh kiwi from southern Europe)
- A fruit salad for 5 people made from available fresh fruit
- Any bread spread (like for example ‘No Empty Bread’)
- Special honeys (orange honey, lavender honey, clover honey …)
- Other bread, if you like (our favorite is buckwheat crispbread)
- Whatever you like: mustard, cheese …
Preparations for Sunday Brunch 2025
- Prepare the ‘Phantom Bearlings’. You can prepare them a few days in advance and freeze them (after cooling). Thaw them in the refrigerator.
- Prepare ‘Cousin Herb’ a day ahead and store it in a closed container in the refrigerator.
- On the day:
- Prepare the ‘Winter Transition Salad’ and refridgerate
- Bake the ‘Sunday Buns’ and set them aside to cool
- Prepare the ‘Clock in A-Flat’ pancakes and set them aside. You can reheat them gently in the oven (at 50 °C) before serving.
- Prepare the soufflés. These can also be warmed slightly in the oven (at 50°C) before serving.
- 1 ½ hours before the start of the buffet:
- Set the table with cutlery
- Prepare the ‘Coco Oat Basic Yog Cream’ and the fruit salad and store both in closed containers in the refrigerator or a cool place.
- Cut any fresh additions to the buffet and prepare decorative/ornamental arrangements (such as a cheese platter).
- Change into the cloth you want to wear for the occasion 😉
- Just before you want to start:
- Get everyone to help you arrange everything on the buffet.
- Heat up pancakes, soufflés and rolls.
- Check the refrigerator for forgotten ‘participants’ (for example, ‘Cousin Herb’ always tries to hide in a corner somewhere).
- Have fun!
Side Notes:
- As always, the most important ingredients to a great brunch are the guests and the people you share it with. Never mind if one of the recipes is not perfect. Just try new combinations. 😉
- Just make 2 recipes of ‘Phantom Bearlings’. You can freeze the rest. Defrost in the fridge and reheat in a pan or even in the microwave (after defrosting).
