Sunday Brunch 2025: Dessert

A smooth addition to the palette. Our favorite basic dessert. Or even a light alternative to whipped cream (‘Coco Oat Basic Yog Cream’, Recipe # 66)

Ingredients for ‘Coco Oat Basic Yog Cream’

  • 400g coconut yogurt (about 20 tablespoons)
  • 175 – 180g oat yogurt (about 12 tablespoons)
  • ¼ teaspoon ground bourbon vanilla powder (pure powder, no sugar)
  • 1 ½ – 2 tablespoons date syrup
  • 1 ½ – 2 teaspoons rice syrup

Preparations for ‘Coco Oat Basic Yog Cream’

  1. Place the coconut yogurt in a large bowl and stir gently to break up any lumps, then add all but two tablespoons of the oat yogurt and stir again gently. It is okay if there are still some lumps of coconut yogurt. Do not stir too much or you will get a sauce.
  2. In a separate bowl, combine the date syrup, rice syrup, and vanilla powder with the remaining two tablespoons of oat yogurt and stir well. You want to dissolve the syrup here.
  3. Add the syrup and vanilla mixture to the yogurt mixture. Stir gently again. Not too much or the whole mixture will turn to sauce.
  4. Refrigerate for 15 minutes or until you are ready to serve.
  5. Before serving, gently stir all the ingredients again to get an even mix.

Although you can make this ahead, I would not let it sit in the fridge for more than 2 or 3 hours before serving it on a buffet. The yogurt tends to get a little watery, so you will need to stir more to re-integrate the cream.

Makes 5 – 7 servings (on a buffet).

Side Notes:

  1. This is the foundation of all desserts in our house. You can add fruit, jam or other fruity stuff. It also works really well in combination with other sweet things on a dessert plate. Or, if you skip the date syrup and cut the vanilla powder in half, it makes a light alternative to whipped cream on a piece of fruitcake. You can also add an extra tablespoon of coconut yogurt if you want a little more creaminess.
